Presents the conclusions of an expert committee commissioned to evaluate the safety for human consumption of selected food additives and naturally occurring toxicants and to establish acceptable daily intakes for these substances. The committee also establishes specifications for the identity and purity of food additives in order to make certain that the materials subjected to toxicological testing are adequately defined and correspond to the products in commerce. The report, which has two parts, evaluates 25 food additives and 3 naturally occurring toxicants. The first part addresses methodological problems, including the use of safety factors to derive acceptable daily intakes, the need for a flexible approach to the safety assessment of flavouring agents, and principles for evaluating naturally occurring toxicants. The second and most extensive part provides succinct summaries of the toxicological data examined and factors considered when evaluating each substance, identifying any potential hazards to consumer health, and allocating an acceptable daily intake. Substances considered include three emulsifiers, three enzyme preparations, five flavouring substances, three solvents, two thickening agents, six waxes, curcumin, furfural, and potassium bromate. Acceptable daily intakes were established or revised for a number of these substances. The report also evaluates safety data on cyanogenic glycosides and on the closely related glycoalkaloids, solanine and chaconine, which are naturally occurring toxicants
