Tóm tắt : | What do Europeans eat? How does their diet affect their health? How and what kind of changes in diet could protect or improve their health? This book provides answers to these questions, acting on the wealth of evidence linking diet to disease and on the call of European expert committees for public health policies to ensure that people in Europe can choose a healthy diet. All Member States in the Region have food policies, but nutrition policies are needed for clear health objectives. The authors are medical nutritionists and they fill this need by presenting a set of nutrient goals, based on national recommendations and reflecting an ideal nutritional pattern for the prevention of noncommunicable diseases. Policy-makers can use these goals to build nutrition policies that meet their particular needs. The authors’ aim is to help countries to improve health by building their own coherent food and nutrition policies. Such policies should take account not only of prevention but also of national dietary and cultural traditions, and the economic and other problems involved in changing the provision of food. This book should be a catalyst; it can both aid and challenge policy-makers, health professionals, nutritionists, people in the food and agricultural industries and the general public. Each of these groups has an important role in the broad intersectoral action needed to make a success of food policies that take account of health.
